For the Gnocchi:
1 lb (450g) potato gnocchi (fresh or vacuum-packed)
1 tablespoon olive oil
3–4 boneless, skinless chicken breasts (about 1 lb or 450g), diced
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon paprika
½ teaspoon black pepper
1 cup (240ml) chicken broth (low-sodium)
1 cup (240ml) heavy cream
8 oz (225g) cream cheese (such as Laughing Cow light)
1 cup (100g) shredded cheddar cheese
1 cup (240ml) fresh spinach, chopped
½ cup (80g) crispy bacon bits
1 teaspoon dried parsley
Salt and pepper to taste
Cook the Gnocchi:
Bring a large pot of salted water to a boil.
Add the gnocchi and cook according to package instructions until they float to the surface.
Drain and set aside.
Prepare the Chicken:
In a large skillet, heat olive oil over medium-high heat.
