For the Base:
12 small corn tortillas
Vegetable oil, for frying
For the Topping:
1 cup refried beans (homemade or canned)
1/2 lb (225 g) cooked shredded beef or chicken
1/2 cup tomato sauce
1/2 small onion, finely chopped
1/2 tsp ground cumin
Salt and pepper, to taste
For Garnish:
1/2 cup crumbled queso fresco or feta cheese
1/4 cup chopped fresh cilantro
2–3 radishes, thinly sliced (optional)
1 lime, cut into wedges
Prepare the Tortillas: Heat vegetable oil in a skillet over medium-high heat. Fry each tortilla for 30–60 seconds per side until crisp but not too hard. Drain on paper towels.
Prepare the Topping: In a small pan, sauté the chopped onion until translucent. Add shredded meat, tomato sauce, cumin, salt, and pepper. Stir until heated through and well combined.
Assemble the Garnachas: Spread a thin layer of refried beans on each fried tortilla. Top with the meat mixture.
Garnish: Sprinkle crumbled queso fresco and chopped cilantro over the top. Add radish slices if desired and serve with lime wedges on the side.
