For the Soup:
1 lb ground beef
1 tbsp olive oil
1 medium onion, diced
3 cloves garlic, minced
3 medium potatoes, diced
2 carrots, peeled and sliced
2 stalks celery, chopped
2 cans (14.5 oz each) diced tomatoes
1 can (15 oz) whole kernel corn, drained
1 can (15 oz) kidney beans, drained and rinsed
1 can (15 oz) pinto beans, drained and rinsed
1 can (15 oz) tomato sauce
4 cups beef broth
1½ cups frozen mixed vegetables
1 tbsp Worcestershire sauce
1 tsp chili powder
1 tsp paprika
1 tsp ground cumin
1 tsp salt
½ tsp black pepper
2 bay leaves
Brown the Ground Beef: In a large skillet over medium heat, heat the olive oil. Add the ground beef and cook until browned, breaking it apart as it cooks. Add the diced onion and minced garlic, cooking until the onion is softened. Drain any excess fat.
