For the Meatloaf:
2 lbs ground beef
1 cup seasoned breadcrumbs
1 medium onion, finely chopped
2 cloves garlic, minced
2 large eggs
1/2 cup whole milk
1/3 cup ketchup
2 tablespoons Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried thyme
1/4 cup chopped fresh parsley
For the Glaze:
1/2 cup ketchup
2 tablespoons brown sugar
1 tablespoon Dijon mustard
Preheat the oven to 350°F (175°C).
In a large bowl, combine the ground beef, breadcrumbs, onion, garlic, eggs, milk, ketchup, Worcestershire sauce, salt, pepper, thyme, and parsley. Mix well by hand until everything is evenly incorporated.
Transfer the meat mixture to a parchment-lined baking sheet or loaf pan. Shape into a loaf.
In a small bowl, mix together the glaze ingredients: ketchup, brown sugar, and Dijon mustard. Spread evenly over the top of the meatloaf.
Bake uncovered for 55-65 minutes, or until the internal temperature reaches 160°F (71°C).
Remove from the oven and let rest for 10 minutes before slicing. Serve warm.
