Zuppa Toscana is a hearty and flavorful Italian soup originating from Tuscany. This comforting dish combines spicy Italian sausage, tender potatoes, and nutritious kale, all simmered in a rich chicken broth and finished with a touch of heavy cream. It's a perfect meal for chilly evenings, offering warmth and satisfaction in every spoonful.
1 lb Italian sausage (mild or spicy)
1 medium onion, chopped
3 cloves garlic, minced
4 cups chicken broth
4 medium potatoes, diced (Yukon Gold or red)
2 cups kale, chopped
1 cup heavy cream
Salt and pepper to taste
Optional: red pepper flakes for added heat
Brown the Sausage: In a large pot over medium heat, cook the sausage until browned, breaking it apart as it cooks. Once browned, remove and set aside.
Sauté Onions and Garlic: In the same pot, add the chopped onion and cook until softened. Add the minced garlic and cook for an additional minute until fragrant.
Add Broth and Potatoes: Pour in the chicken broth and add the diced potatoes. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15 minutes, or until the potatoes are tender.
Incorporate Sausage and Kale: Return the browned sausage to the pot and add the chopped kale. Cook until the kale is wilted, about 5 minutes.
Finish with Cream: Stir in the heavy cream and season with salt and pepper to taste. Let the soup heat through for another 5 minutes before serving.
