Full Recipe:
1 lb (450 g) lean ground beef (90% lean)
1 packet taco seasoning (or homemade)
¾ cup (180 ml) red enchilada sauce
2½ cups (250 g) shredded Oaxaca cheese (or Monterey Jack, Cheddar, or Mexican blend)
10 corn tortillas
1 tbsp (15 ml) olive oil (or avocado/vegetable oil)
Preheat Oven: Set your oven to 450°F (232°C).
Cook Ground Beef: In a skillet over medium-high heat, brown the ground beef, breaking it apart as it cooks. Stir in the taco seasoning and enchilada sauce. Simmer for a few minutes, then remove from heat.
Prepare Tortillas: Wrap the tortillas in a damp paper towel and microwave for 30–60 seconds until pliable. Brush one side of each tortilla with olive oil.
Assemble Tacos: Place the oiled side of each tortilla down on a baking sheet. Add 2 tablespoons of shredded cheese to half of each tortilla, followed by ¼ cup of the beef mixture, and then another 2 tablespoons of cheese. Fold the tortilla over to form a taco.
Bake: Arrange the filled tacos on the baking sheet in a single layer. Bake for 16 minutes, or until the tortillas are golden and crispy. Let them cool for 3 minutes before serving.
