For the Chicken:
4 boneless, skinless chicken breasts
1/4 cup all purpose flour
2 large eggs, beaten
1 cup panko breadcrumbs
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
Salt and pepper, to taste
2 tablespoons olive oil, for frying
For the Hot Honey Sauce:
1/3 cup honey
1 1/2 teaspoons hot sauce (such as Frank's or Cholula)
3/4 teaspoon chili flakes
For the Topping:
200g (7 oz) feta cheese, crumbled
Prepare the Hot Honey Sauce:
In a small bowl, combine the honey, hot sauce, and chili flakes. Warm the mixture in the microwave for about 20 seconds, stir, and set aside to cool.
Prepare the Chicken:
Slice each chicken breast horizontally to create two thinner pieces.
In a shallow dish, combine the flour with half of the seasoning mix (garlic powder, onion powder, paprika, salt, and pepper).
In another shallow dish, place the beaten eggs.
In a third shallow dish, combine the panko breadcrumbs with the remaining seasoning mix.
Dredge each chicken piece in the flour mixture, dip into the beaten eggs, and then coat with the seasoned panko breadcrumbs.
