For the Chicken:
3 pounds boneless, skinless chicken thighs
2 teaspoons olive oil
4–5 tablespoons water (optional, for pan frying)
For the Marinade:
1 can (7 oz) chipotle peppers in adobo sauce
4 tablespoons fresh lime juice
4 tablespoons fresh orange juice
½ cup fresh cilantro
6 garlic cloves
1 medium onion, quartered
1 teaspoon ground cumin
1 tablespoon dried oregano
1 teaspoon ground coriander (optional)
1 teaspoon smoked paprika
1 teaspoon salt
½ teaspoon black pepperf
Prepare the Marinade:
In a blender or food processor, combine all marinade ingredients. Blend until smooth and well combined.
Marinate the Chicken:
Place the chicken thighs in a large resealable bag or airtight container. Pour the marinade over the chicken, ensuring all pieces are well coated.

Air Frying: Preheat the air fryer to 400°F (200°C). Lightly oil the basket. Air fry the chicken for 8 minutes, flip, and cook for an additional 6–7 minutes until the internal temperature reaches 165°F (74°C).
Serve:
