2 pounds ground beef (80% lean)
1 cup breadcrumbs
1 small onion, finely chopped
2 large eggs
1 teaspoon Worcestershire sauce
1 teaspoon minced garlic
1 teaspoon dried tarragon
1 teaspoon sea salt
1 teaspoon ground black pepper
½ cup barbecue sauce (for topping)
Preheat your oven to 350°F (175°C).
In a large bowl, combine the ground beef, breadcrumbs, chopped onion, eggs, Worcestershire sauce, minced garlic, dried tarragon, salt, and black pepper. Mix until just combined; avoid overmixing to keep the meatloaf tender.
Transfer the meat mixture into a lightly greased loaf pan, shaping it into a loaf.
Spread the barbecue sauce evenly over the top of the meatloaf.
Bake in the preheated oven for 55 to 60 minutes, or until the meatloaf reaches an internal temperature of 160°F (71°C).
