This Crock Pot Creamy Cajun Chicken Pasta is the ultimate weeknight savior rich in flavor, effortless to prepare, and hearty enough to satisfy the whole family. Made in a slow cooker, it brings together tender chicken, bold Cajun spices, a silky cream cheese Parmesan sauce, and perfectly cooked pasta all in one dish.
Full Recipe:
1 ½ pounds boneless, skinless chicken breasts
2 tablespoons Cajun seasoning
1 teaspoon paprika
½ teaspoon garlic powder
Salt and pepper, to taste
1 tablespoon olive oil
1 red bell pepper, sliced
1 green bell pepper, sliced
½ yellow onion, sliced
3 cups low-sodium chicken broth
8 ounces cream cheese, cubed
1 cup shredded Parmesan cheese
12 ounces penne or rotini pasta
Season the chicken: Rub the chicken breasts with Cajun seasoning, paprika, garlic powder, salt, and pepper. (Option to marinate 15–20 minutes for extra flavor.)
Layer in the crock pot: Place seasoned chicken in the bottom, then add sliced bell peppers, onion, and chicken broth. Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is tender.
Shred the chicken: Remove the cooked chicken and shred it using two forks. Return the shredded chicken to the slow cooker.
Add creamy elements: Stir in cubed cream cheese and shredded Parmesan until melted and creamy. Let cook an additional 10–15 minutes on low to fully combine.
Cook the pasta: Meanwhile, prepare the pasta separately according to package instructions until al dente. Drain and stir into the creamy chicken mixture in the crock pot.
Serve: Dish into bowls and garnish with fresh parsley, extra Parmesan cheese, or a sprinkle of red pepper flakes for extra heat.
