12 oz rice noodles
1 lb ground beef (or ground turkey/chicken)
1 tbsp vegetable oil
1 medium onion, diced
2 cloves garlic, minced
1-inch piece fresh ginger, minced
2 tbsp gochujang (Korean chili paste)
2 tbsp soy sauce
1 tbsp sesame oil
1 tbsp honey
1 bell pepper, sliced
1 cup snap peas, trimmed
2 green onions, sliced (for garnish)
Cook the Noodles: Boil the rice noodles according to the package instructions. Once cooked, drain and set aside.
Sauté the Aromatics: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the diced onion and sauté for 2-3 minutes until softened. Add the minced garlic and ginger, cooking for an additional minute until fragrant.
