This hearty and budget-friendly dish combines tender cabbage with savory ground beef, creating a comforting meal that's both nutritious and satisfying. It's a one-pan recipe that's easy to prepare, making it perfect for busy weeknights or meal prepping for the week ahead.
1 lb (450 g) ground beef
1 small head of cabbage, chopped
1 medium onion, chopped
2 cloves garlic, minced
1 can (14.5 oz) diced tomatoes
1 cup beef broth
1 tablespoon olive oil
1 teaspoon dried oregano
1 teaspoon dried thyme
Salt and pepper to taste
Cook the Ground Beef:
In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks. Drain any excess fat.
Sauté the Vegetables:
Add the chopped onion and minced garlic to the skillet with the cooked beef. Sauté until the onion becomes translucent, about 3–4 minutes.
Add the Cabbage:
Stir in the chopped cabbage and cook until it begins to wilt, about 5 minutes.
Simmer:
Pour in the diced tomatoes (with their juice) and beef broth. Add the dried oregano, dried thyme, salt, and pepper. Stir to combine.
Cook Until Tender:
Cover the skillet and let the mixture simmer over low heat for 20–25 minutes, stirring occasionally, until the cabbage is tender and the flavors are well combined.
Serve:
Taste and adjust seasoning with additional salt and pepper if needed. Serve hot and enjoy!
