2 lbs (about 900g) large shrimp, peeled and deveined (tails on or off as preferred)
2 tablespoons vegetable oil
10 cloves garlic, minced
1/2 bunch cilantro, chopped
1 teaspoon paprika
1-2 fresh red chili peppers, diced (adjust to desired spice level)
4 teaspoons fresh lemon juice
1 tablespoon soy sauce
1 tablespoon water
Salt to taste
Prepare the Shrimp: If using raw shrimp, bring a pot of water to a boil. Add the shrimp and cook until they turn pink and opaque, about 2-3 minutes. Immediately transfer them to an ice bath to stop the cooking process. Drain and set aside.
