1 tablespoon olive oil
½ yellow onion, diced
6 cloves garlic, minced
16 oz ground Italian sausage
1 tablespoon Italian seasoning
2 tablespoons tomato paste
4 cups chicken broth
1 (28 oz) can crushed tomatoes
18 oz refrigerated cheese or spinach ravioli
2 cups fresh spinach, chopped
1 cup heavy cream
Kosher salt and freshly cracked black pepper, to taste
Shaved Parmesan and fresh chopped parsley, for garnish
Sauté Aromatics: Heat olive oil in a large pot over medium-high heat. Add diced onion with a pinch of salt and pepper. Sauté for 3–4 minutes until softened. Add minced garlic and Italian seasoning; sauté for an additional 30 seconds.
