For the Meatloaf:
2 lbs ground chicken
1 cup panko bread crumbs
½ cup grated Parmesan cheese, plus more for topping
¼ cup milk
2 large eggs, lightly beaten
4 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon dried Italian seasoning
½ teaspoon salt
¼ teaspoon black pepper
¼ cup chopped fresh parsley
¼ cup chicken broth
2 tablespoons butter, melted
1 tablespoon garlic powder
Preheat the Oven: Set your oven to 350°F (175°C). Lightly grease a 9×5 inch loaf pan with cooking spray or olive oil.
Prepare the Meatloaf Mixture:
