2 tablespoons olive oil
1 pound chicken breast, diced
1 medium onion, diced
2 cloves garlic, minced
1 cup long-grain white rice
2 cups chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 teaspoon dried thyme
Salt and black pepper to taste
1 cup frozen peas
2 tablespoons butter
1 tablespoon dried parsley
Heat olive oil in a large skillet over medium heat.
Add diced chicken breast and cook until browned and no longer pink, about 5–7 minutes. Remove chicken and set aside.
