Full Recipe:
115 grams (1/2 cup) unsalted butter, melted
90 grams (1/2 cup) brown sugar
50 grams (1/4 cup) caster sugar or granulated sugar
1 teaspoon vanilla extract
1 large egg
210 grams (1 1/2 cups) plain flour or all-purpose flour
1/2 teaspoon baking soda
Pinch of salt
150 grams (1 cup) chocolate chips, plus extra for decorating
Sea salt flakes, for decorating
In a heatproof bowl, melt the butter in the microwave until just melted. Allow it to cool slightly.
Add the brown sugar, caster sugar, vanilla extract, and egg to the melted butter. Stir until the mixture is smooth and well combined.
Sift in the plain flour, baking soda, and a pinch of salt. Mix until a soft cookie dough forms.
Fold in the chocolate chips until evenly distributed throughout the dough.
Cover the dough and refrigerate for at least one hour. For a quicker option, freeze the dough for 30 minutes.
Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking tray, spacing them about 5 cm apart.
Bake for 10–12 minutes, or until the edges are golden brown.
Remove from the oven and immediately sprinkle with sea salt flakes. Allow the cookies to cool on the tray for a few minutes before transferring them to a wire rack to cool completely.
