For the Pancake Poppers:
1 cup all-purpose flour
2 tablespoons granulated sugar
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 large egg
¾ cup buttermilk
1 teaspoon vanilla extract
2 tablespoons unsalted butter, melted
¼ cup mini chocolate chips (optional)
¼ cup fresh blueberries (optional)
For the Maple Glaze:
½ cup powdered sugar
2 tablespoons pure maple syrup
1–2 teaspoons milk (adjust for desired consistency)
Preheat Oven: Set your oven to 350°F (175°C). Grease or line a mini muffin tin with paper liners.
Prepare Wet Ingredients: In a medium bowl, whisk together the egg, buttermilk, vanilla extract, and melted butter until well combined.
Combine Dry Ingredients: In a separate large bowl, sift together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt.
Mix Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are okay.
Add Mix-ins: Fold in the mini chocolate chips and/or blueberries if using.
Fill Muffin Tin: Spoon the batter into the prepared mini muffin tin, filling each cup about ¾ full.

Prepare Maple Glaze: While the poppers are baking, whisk together the powdered sugar, maple syrup, and milk in a small bowl until smooth. Adjust the milk to achieve your desired glaze consistency.
Glaze the Poppers: Once the pancake poppers are baked and slightly cooled, drizzle the maple glaze over the top of each one.
Serve: Allow the glaze to set for a few minutes before serving. Enjoy warm!
