For the Pie:
1 pre-made 9-inch pie crust (store-bought or homemade)
1 lb (450g) fresh shrimp, peeled, deveined, and coarsely chopped
1 tablespoon butter
1 small onion, finely chopped
1/2 cup (120ml) mayonnaise
1/2 cup (120ml) heavy cream
2 large eggs
1 tablespoon lemon juice
1 teaspoon Old Bay seasoning
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper (optional)
1/2 cup (60g) shredded cheddar cheese
Salt and black pepper to taste
Fresh parsley, chopped (for garnish)
Preheat Oven: Set your oven to 375°F (190°C).
Prepare the Crust: Roll out the pie crust and fit it into a 9-inch pie pan. Prick the bottom with a fork to prevent bubbling. Bake for 10 minutes until lightly golden.
Cook the Shrimp: In a skillet, melt butter over medium heat. Add chopped onion and sauté until translucent. Add shrimp and cook until pink and opaque, about 3-4 minutes. Remove from heat and set aside.
