1 lb boneless, skinless chicken breasts, cut into strips
½ cup Dijon mustard
¼ cup honey
1 cup breadcrumbs (panko or regular)
1 tsp garlic powder
1 tsp onion powder
½ tsp paprika
½ tsp salt
¼ tsp black pepper
¼ cup all-purpose flour
2 large eggs, beaten
Preheat your oven to 400 °F (200 °C). Line a baking sheet with parchment paper or lightly grease it.
In a medium bowl, whisk together the Dijon mustard and honey until smooth; set aside.
In a shallow dish, mix together the breadcrumbs, garlic powder, onion powder, paprika, salt, and black pepper.
Set up two additional shallow dishes one with flour, and one with the beaten eggs.
Working with one chicken strip at a time:
Coat it in flour, shaking off excess.
Dip into the beaten eggs.
Press into the breadcrumb mixture to adhere well.
