These Blueberry Swirl Yogurt Bites are delightful, bite sized frozen snacks that blend creamy Greek yogurt with vibrant blueberry compote for a beautiful marbled effect. They're no bake, freezer friendly, and naturally sweetened making them perfect for meal prep, refreshing snacks, or elegant party treats.
Full Recipe:
1 cup full fat Greek yogurt
½ cup blueberries (fresh or frozen)
2 tablespoons honey or maple syrup
1 teaspoon lemon juice
½ teaspoon vanilla extract
Make the blueberry swirl: In a small saucepan, combine blueberries, honey (or maple syrup), and lemon juice. Simmer gently over medium heat and mash slightly with the back of a spoon. Cook for about 5–7 minutes until glossy and thickened. If using cornstarch, mix 1 teaspoon with 1 tablespoon cold water, add to the compote, and simmer for another minute. Let cool completely before proceeding.
Prepare the yogurt base: Whisk together the Greek yogurt and vanilla extract until smooth; sweeten further with honey if desired.
Spoon and swirl: Fill silicone molds or mini muffin tin liners about three-quarters full with the yogurt mixture. Add about ½ to 1 teaspoon of the cooled blueberry compote to each portion. Use a toothpick or the tip of a knife to gently swirl for a marbled look.
Freeze: Place the molds on a flat surface in the freezer. Freeze for at least 3 hours, or overnight, until completely firm.
Serve: Pop the bites out of the molds and transfer to an airtight container lined with parchment paper. To serve, let them sit at room temperature for 2–3 minutes just long enough to soften slightly while still frozen.
