For the Meatloaf:
1¼ lbs ground beef (90% lean)
2 teaspoons olive oil
½ cup finely diced onion
½ cup cooked and crumbled bacon
¼ cup panko breadcrumbs
1 tablespoon yellow mustard
1 tablespoon Worcestershire sauce
¾ teaspoon salt
½ teaspoon black pepper
1 large egg
½ cup cheddar cheese, cut into small cubes
For the Topping:
¼ cup ketchup
1 tablespoon chopped fresh parsley (optional)
Preheat Oven: Set your oven to 350°F (175°C). Line a baking sheet with foil and coat it with cooking spray.
