Semisweet or bittersweet chocolate – 6 oz (170 g), chopped
Unsalted butter – 2 tablespoons (30 g)
Large eggs – 3, separated
Granulated sugar – 1/4 cup (50 g), divided
Heavy whipping cream – 1 cup (240 ml)
Vanilla extract – 1/2 teaspoon
Pinch of salt
