Full Recipe:
1 pound shrimp (peeled, deveined, tail-on)
1½ tablespoons finely minced garlic (divided)
1 tablespoon + 2 teaspoons Old Bay seasoning (divided)
1½ tablespoons fresh lemon juice
3 tablespoons unsalted butter (divided)
1 tablespoon olive oil
12 oz dried spaghetti
¼ cup finely minced shallots
¼ cup dry white wine (e.g., Pinot Grigio or Sauvignon Blanc)
½ cup heavy cream
¼ cup chopped fresh parsley (and more for serving)
½ cup freshly shredded Parmesan cheese (and more for serving)
Salt and black pepper to taste
Cook the Pasta: In a large pot, bring salted water to a boil. Add the spaghetti and cook until al dente according to package instructions. Reserve at least ½ cup of pasta water before draining.
Season the Shrimp: In a bowl, toss the shrimp with 2 teaspoons of Old Bay seasoning and lemon juice. Mix well.
Cook the Shrimp: In a large skillet over medium-high heat, melt 1 tablespoon of butter with olive oil. Add ½ tablespoon of minced garlic and sauté until fragrant. Add the seasoned shrimp and cook until they turn pink. Remove the shrimp and set aside.
Prepare the Sauce: In the same skillet, melt the remaining 2 tablespoons of butter. Add the shallots and cook until translucent. Add the remaining 1 tablespoon of minced garlic and sauté until fragrant. Pour in the white wine and simmer until reduced by half.
Finish the Sauce: Stir in the heavy cream, Parmesan cheese, and 1 tablespoon of Old Bay seasoning. Let the cheese melt and the sauce thicken slightly.
Combine: Return the cooked shrimp to the skillet, add the chopped parsley, and stir to combine. Lower the heat to low. Add the cooked pasta and toss to coat, adding reserved pasta water as needed to achieve desired sauce consistency.
Serve: Season with salt and black pepper to taste. Serve warm, garnished with additional Parmesan cheese and parsley.
