⅓ cup barbecue sauce
2 tbsp hot sauce (optional)
For the Mac and Cheese:
12 oz medium sized pasta shells
4 tbsp butter
¼ cup all purpose flour
½ tsp salt
½ tsp pepper
½ tsp chipotle powder
½ tsp garlic powder
1½ cups milk
½ cup water
¾ cup shredded cheddar cheese
½ cup shredded pepper jack cheese
Cook the Chicken: Season the chicken breasts with salt, pepper, chipotle powder, and garlic powder. Heat oil in a skillet over medium high heat. Cook the chicken for 8-10 minutes on each side until it reaches an internal temperature of 165°F. Let it rest for 2 minutes before shredding or chopping into bite sized pieces. Toss the chicken with barbecue sauce and hot sauce (if using).
