A wonderfully easy, tropical flavored slow cooker chicken that combines tender chicken, pineapple, and a lightly sweet, savory sauce. It's ideal for busy weeknights you just dump everything into the crock pot and let it cook.
Full Recipe:
½ lb boneless, skinless chicken breast, cut into cubes
2 Tbsp soy sauce (or tamari for gluten‑free)
1 tsp tomato paste
1 tsp Worcestershire sauce
¼ tsp garlic powder
½ tsp brown sugar
Black pepper, to taste
1 red bell pepper, diced
8 oz canned pineapple chunks with juice
Optional garnish: sliced scallions; rice for serving
In the crock pot, stir together soy sauce, tomato paste, Worcestershire sauce, garlic powder, brown sugar, and black pepper.
Add the cubed chicken, diced red bell pepper, and pineapple chunks (including the juice), gently stirring to coat evenly.
Cover and cook on low heat for 4–6 hours, or on high for 2–3 hours, until the chicken is tender.
About 30 minutes before serving, taste and adjust seasonings if desired (more soy sauce or brown sugar).
