2 Tbsp avocado oil (or olive oil)
1 lb lean ground beef (90/10 or similar)
½ cup diced yellow onion
1 medium red bell pepper, diced
1 lb potatoes, cut into ~½″ cubes (Yukon Gold or similar)
4 oz canned diced green chiles (mild or hot, to taste)
2½ tsp chili powder
1 tsp ground cumin
½ tsp smoked paprika
Kosher salt and freshly ground black pepper to taste
½ cup shredded cheese (cheddar, Colby Jack, Monterey Jack, or Pepper Jack)
¼ cup chopped cilantro (for garnish, optional)
