This Easy Ground Beef Bulgogi offers a quick and flavorful twist on the traditional Korean BBQ dish. Instead of grilling marinated beef slices, this version uses ground beef simmered in a savory sweet bulgogi sauce, topped with scallions, sesame seeds, and a soft boiled egg. It's a convenient and delicious option for busy weeknights.
Full Recipe:
For the Bulgogi Sauce:
¼ cup soy sauce
2 tablespoons rice wine vinegar
1 tablespoon brown sugar
2 teaspoons sesame oil
1 teaspoon fresh ginger, minced
1 teaspoon fresh garlic, minced
For the Ground Beef:
1 pound ground beef
½ small yellow onion, diced
For Topping:
1 tablespoon scallion, diced
1 teaspoon sesame seeds
4 large soft boiled eggs
Prepare the Bulgogi Sauce: In a medium bowl, combine soy sauce, rice wine vinegar, brown sugar, sesame oil, minced ginger, and minced garlic. Mix well to combine and set aside.
Cook the Ground Beef: In a skillet over medium heat, add ground beef and diced onion. Cook until the beef is browned and the onion is softened, about 5 minutes. The meat may still be slightly pink.
Add the Bulgogi Sauce: Pour the prepared bulgogi sauce over the cooked beef and onion mixture. Stir to combine and simmer for an additional 2–3 minutes until the sauce is heated through and slightly thickened.
Prepare the Soft-Boiled Eggs: While the beef is simmering, bring a pot of water to a boil. Gently add the eggs and cook for 6 minutes for soft-boiled eggs with a runny yolk. Transfer the eggs to an ice water bath to cool slightly before peeling.
Assemble the Dish: Divide the cooked beef bulgogi mixture among serving bowls. Top each with a soft boiled egg, diced scallions, and a sprinkle of sesame seeds. Serve immediately.
