For the Chicken:
500g boneless, skinless chicken breasts, cut into bite-sized pieces
1 tablespoon olive oil
Salt and freshly ground black pepper, to taste
For the Pasta:
300g pasta (such as fettuccine, linguine, or penne)
2 tablespoons unsalted butter
4–6 cloves garlic, finely minced
120ml chicken stock
250ml double cream
100g freshly grated Parmesan cheese
Fresh parsley, finely chopped, for garnish
Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain and set aside, reserving a small amount of pasta water.
Prepare the Chicken: In a large skillet, heat the olive oil over medium heat. Season the chicken pieces with salt and pepper. Add the chicken to the skillet and cook until browned and cooked through, about 5–7 minutes. Remove from the skillet and set aside.
Make the Sauce: In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Pour in the chicken stock and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
Combine Pasta and Sauce: Reduce the heat to low. Add the double cream to the skillet and stir to combine. Gradually add the grated Parmesan cheese, stirring constantly until the sauce is smooth and creamy.
Toss Pasta and Chicken: Return the cooked chicken to the skillet. Add the drained pasta and toss to coat evenly with the sauce. If the sauce is too thick, add a splash of the reserved pasta water to reach desired consistency.
