Meat:
1 lb ground beef (80/20 blend)
½ lb ground pork
½ cup breadcrumbs (panko recommended)
1 large egg
1 tsp smoked paprika
1 tsp garlic powder
½ tsp salt
½ tsp black pepper
Filling:
3 jalapeños, diced (seeds removed for less heat)
½ cup shredded cheddar cheese
¼ cup cream cheese, softened
Topping:
4 strips bacon, cooked crisp and crumbled
Preheat the Oven:
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
Prepare the Meat Mixture:
In a large bowl, combine the ground beef, ground pork, breadcrumbs, egg, smoked paprika, garlic powder, salt, and black pepper. Mix gently until just combined; avoid overmixing to keep the meatloaf tender.
