Full Recipe:
1 large egg
1 cup seasoned bread crumbs
¼ cup chopped onion
½ to 1 teaspoon salt
½ teaspoon ground black pepper
1 to 1½ pounds lean ground beef
1 cup shredded pepper jack cheese, divided
Preheat Oven: Set your oven to 400°F (205°C) to ensure even cooking.
Prepare Meat Mixture: In a large bowl, combine the egg, seasoned bread crumbs, chopped onion, salt, and pepper. Mix until well combined.
Add Ground Beef: Add the ground beef to the mixture. Gently combine using your hands until just mixed; avoid overmixing to maintain tenderness.
Form Loaf: Press about three-quarters of the meat mixture into a loaf pan, creating a well in the center.
Add Cheese: Place half of the shredded pepper jack cheese into the center well.
Seal and Top: Cover with the remaining meat mixture, pressing gently to seal. Top with the remaining cheese.
Bake: Bake in the preheated oven for about 1 hour, or until the top is golden brown and the internal temperature reaches 160°F (71°C).
Rest and Serve: Allow the meatloaf to rest for a few minutes before slicing to retain its juices.
