4 boneless, skinless chicken breasts
Salt and pepper, to taste
1 tablespoon olive oil
2 tablespoons unsalted butter
1 cup chicken broth
½ cup heavy cream
1 (5.2 oz) package Boursin garlic and herb cheese
Fresh parsley, chopped (for garnish)
Preheat the oven to 375°F (190°C).
Season the chicken breasts generously with salt and pepper on both sides.
Heat olive oil in a large oven-safe skillet over medium-high heat. Add the chicken breasts and cook for 5–6 minutes per side until golden brown. Remove the chicken from the skillet and set aside.
Melt butter in the same skillet over medium heat. Add the chicken broth, heavy cream, and Boursin cheese. Stir until the cheese is melted and the sauce is smooth.
