1 tablespoon olive oil
1 pound ground beef
1 small onion, finely diced
1 green or red bell pepper, diced
2 celery stalks, diced
2 cloves garlic, minced
1 teaspoon paprika
1 teaspoon dried thyme
½ teaspoon cayenne pepper
1 teaspoon salt (adjust to taste)
½ teaspoon ground black pepper
2 cups chicken broth
1 cup long grain white rice
2 tablespoons fresh parsley, chopped (for garnish)
Heat olive oil in a large skillet over medium heat.
Add ground beef to the skillet and cook, breaking it apart with a spoon, until browned and no longer pink.
Stir in diced onion, bell pepper, and celery. Cook until the vegetables are tender, about 5 minutes.
Add minced garlic, paprika, thyme, cayenne pepper, salt, and black pepper. Stir to combine and cook for an additional minute to release the spices' aromas.
Pour in chicken broth and bring the mixture to a boil.
