The Cheesy Grilled Cheese Burrito is a delightful fusion of classic comfort foods, combining the beloved grilled cheese sandwich with the heartiness of a burrito. This dish features melted cheese oozing out, mingling with crispy tortillas and tasty fillings, offering a satisfying meal perfect for any time of day.
4 large flour tortillas
2 cups shredded cheese (cheddar, mozzarella, or a blend)
1 cup cooked chicken, beef, or beans (optional)
1 cup sautéed vegetables (bell peppers, onions, mushrooms)
1 tablespoon butter
Salsa or guacamole for serving (optional)
Salt and pepper to taste
Prepare the Filling:
In a bowl, mix the shredded cheese, cooked protein, and sautéed vegetables. Season with salt and pepper to taste.
Heat a Pan:
Preheat a skillet over medium heat. Add butter to coat the bottom of the pan.
Assemble the Burrito:
Place a tortilla on a flat surface. Add a generous portion of the filling mixture to the center.
Fold the Burrito:
Fold in the sides of the tortilla, then roll it up from the bottom to keep the filling inside. Repeat with the remaining tortillas.
Cook the Burrito:
Place the folded burrito seam-side down in the hot skillet. Cook for about 2–3 minutes, pressing lightly with a spatula until golden brown.
Flip and Cook:
Carefully flip the burrito and cook the other side until golden and crispy, about 2–3 minutes more.
Slice and Serve:
Remove the burrito from the pan and let it cool slightly. Slice it in half diagonally and serve with salsa or guacamole if desired.
