2 cups all purpose flour
1 ½ cups granulated sugar
¾ cup unsweetened cocoa powder
1 ½ tsp baking powder
1 ½ tsp baking soda
1 tsp salt
2 large eggs
1 cup whole milk
½ cup vegetable oil
2 tsp vanilla extract
1 ½ cups heavy cream
8 oz semi‑sweet chocolate, chopped
3 large eggs, separated (yolks and whites)
½ cup granulated sugar (for yolks)
Preheat and Prepare Pans
Preheat the oven to 350 °F. Grease and flour two 9-inch round cake pans.
Mix Dry Ingredients
In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
Combine Wet Ingredients
Add eggs, milk, oil, and vanilla to the dry mixture. Beat on medium speed for about 2 minutes until smooth.
Add Boiling Water
Stir in boiling water carefully the batter will be thin.
Bake

Whip heavy cream until soft peaks form. Gently fold into the chocolate yolk mixture.
Incorporate Egg Whites
Beat egg whites in a clean bowl until stiff peaks form. Gently fold into the mousse mixture until no white streaks remain.
Assemble Cake
Place one cooled cake layer on serving plate. Spread half the mousse over it. Top with second layer, then cover the top and sides with remaining mousse.
Chill
