4 cups corn kernels (fresh, grilled or roasted, or frozen and thawed)
½ cup mayonnaise
½ cup sour cream or Mexican crema
½ cup crumbled cotija cheese (plus extra for topping)
1 lime, juiced
1 teaspoon chili powder (or to taste)
½ teaspoon garlic powder
¼ cup fresh cilantro, chopped (plus extra for garnish)
Salt and pepper to taste
Tortilla chips, for serving
Prepare the Corn:
If using fresh corn, grill or roast the ears until slightly charred. Once cooled, cut the kernels off the cob.
