2 ½ cups (500g) overripe bananas, mashed
¼ cup melted coconut oil or avocado oil
2 large eggs
1 teaspoon vanilla extract
1 ¾ cups (198g) white whole wheat flour
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon kosher salt
1 teaspoon ground cinnamon
½ cup mix-ins (optional; e.g., chocolate chips, chopped nuts, dried fruit)
Prepare the pans and preheat the air fryer. Lightly grease three mini loaf pans with butter or coconut oil. Preheat the air fryer to 320°F (160°C).
Mash the bananas. In a medium bowl, mash the bananas until smooth.
Mix in the wet ingredients. Add the melted oil, eggs, and vanilla extract to the mashed bananas. Stir until well combined.
Combine the dry ingredients. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
Combine wet and dry ingredients. Add the dry ingredients to the wet mixture and stir until just combined. If using, fold in your choice of mix-ins.
