These sliders offer a delightful Tex Mex twist on the traditional sloppy joe. With seasoned ground beef, bell peppers, and a rich enchilada sauce, all nestled between soft slider buns and melted pepper jack cheese, they’re a crowd-pleasing favorite that’s both comforting and flavorful.
Full Recipe:
1 lb ground beef
1 onion, diced
1 red bell pepper, diced
1 yellow bell pepper, diced
1 green bell pepper, diced
1 tsp ground cumin
1 tsp onion powder
1 tsp garlic powder
⅓ cup oatmeal
1 (10 oz) can red enchilada sauce
1 tbsp brown sugar
8 slices pepper jack cheese
12 slider buns
Chopped scallions, for topping
Optional: paprika, for garnish
In a large pan, combine the ground beef, diced onion, and bell peppers. Cook over medium-high heat for about 7–10 minutes until the beef is browned and cooked through. Drain any excess grease.
Stir in the cumin, onion powder, and garlic powder. Add the oatmeal and mix well.
Pour in the enchilada sauce and sprinkle the brown sugar over the mixture. Stir to combine, bring to a boil, then reduce heat and simmer on low for about 15 minutes, stirring occasionally. Preheat your oven to 375°F (190°C).
Slice the slider buns in half and place the bottom halves on a parchment lined baking sheet.
Once the beef mixture has thickened, spoon it generously over the bottom buns. Top with 6 slices of pepper jack cheese.
Place the top halves of the buns on, then cut the remaining 2 slices of cheese into thin strips to mimic shredded cheese. Sprinkle this over the tops of the buns, followed by chopped scallions. Optionally, sprinkle with paprika for added flavor.
Bake in the preheated oven for about 3 minutes, or until the cheese is melted and bubbly. Remove from the oven and serve warm.
