For the Batter:
2 cups all purpose flour
1 cup vegetable or canola oil
½ cup milk (dairy or non dairy)
8 large eggs (room temperature)
1 teaspoon vanilla extract
For the Icing:
2 cups powdered (icing) sugar
Zest of 1 lemon (optional)
2 tablespoons milk (adjust for desired consistency)
Preheat Oven: Set your oven to 350°F (175°C). Grease a 24-count mini muffin tin or two 12-count standard muffin tins.
Prepare the Batter: In a large mixing bowl, combine the flour, oil, milk, eggs, and vanilla extract. Using an electric mixer or stand mixer, beat the mixture on medium-high speed for at least 20 minutes. This extended mixing time incorporates air into the batter, giving the popovers their characteristic puffiness.
Fill the Tins: Pour the batter into the prepared muffin tins. For mini muffin tins, fill each cup about three-quarters full. For standard muffin tins, fill each cup halfway.
