8 oz (225 g) pasta (such as fettuccine or linguine)
1 lb (450 g) large shrimp, peeled and deveined
2 tablespoons olive oil
3 cloves garlic, minced
1/2 cup (120 ml) heavy cream
1/2 cup (120 ml) chicken broth
1/2 cup (50 g) grated Parmesan cheese
Salt and freshly ground black pepper, to taste
Chopped parsley, for garnish
Cook the pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Drain and set aside.
Sauté the shrimp: While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
Prepare the sauce: In the same skillet, add minced garlic and sauté until fragrant, about 1 minute. Pour in the chicken broth and bring to a simmer. Let it reduce slightly for about 2 minutes.
Make it creamy: Stir in the heavy cream and bring to a simmer. Let it cook for 3-4 minutes until the sauce thickens slightly.
Combine: Return the cooked shrimp to the skillet. Add the cooked pasta and toss to coat in the creamy sauce. Stir in the grated Parmesan cheese and season with salt and pepper to taste.
Serve: Garnish with chopped parsley and serve immediately.
