For the Banana Bread:
2 large very ripe bananas
½ cup caramel macchiato-flavored liquid coffee creamer
⅔ cup white sugar
½ cup vegetable oil
2 large eggs
2 tablespoons instant coffee granules
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon ground cinnamon
⅛ teaspoon salt
For the Caramel Glaze:
6 tablespoons unsalted butter
6 tablespoons packed brown sugar
1 teaspoon vanilla extract
Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan with cooking spray.
In a large mixing bowl, mash the bananas until smooth.
Stir in the coffee creamer, white sugar, vegetable oil, eggs, and instant coffee granules until well combined.
In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, ground cinnamon, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Pour the batter into the prepared loaf pan.
Bake in the preheated oven for 60 minutes, or until a toothpick inserted into the center comes out clean.
While the bread is baking, prepare the caramel glaze. In a saucepan over medium heat, melt the butter.
Stir in the brown sugar and vanilla extract. Bring to a boil, then reduce the heat and simmer for 3 minutes.
