4 salmon fillets (approximately 6 oz each)
1/2 cup grated Parmesan cheese (preferably freshly grated)
1/4 cup panko breadcrumbs
2 cloves garlic, finely minced
1 tablespoon chopped fresh parsley
Zest of 1 lemon
1 tablespoon olive oil (for the crust)
Salt and freshly ground black pepper, to taste
1 tablespoon olive oil or melted butter (for brushing the salmon)
Lemon wedges, for serving

Preheat the Oven:
