1 lb (450g) lean ground beef
1 medium onion, chopped
3 cloves garlic, minced
1 (1 oz) packet taco seasoning mix
12 oz (340g) baby red potatoes, scrubbed and chopped
1 (15.5 oz) can dark kidney beans, drained and rinsed
1 (14.75 oz) can fire-roasted corn, drained
1 (14.5 oz) can fire-roasted diced tomatoes, drained
1 (10.5 oz) can condensed cream of chicken soup
1 (4 oz) can mild or hot diced green chiles, undrained
2 oz (60g) shredded Cheddar-Jack cheese
Sour cream and fresh cilantro leaves for garnish (optional)
Brown the Ground Beef:
In a large skillet over medium-high heat, cook the ground beef until browned and cooked through, about 6 minutes. Drain any excess fat.
Sauté Onions and Garlic:
