Full Recipe:
Meatloaf:
1 lb lean ground beef (80/20 recommended)
½ cup breadcrumbs (Italian or seasoned)
1 large egg
1 small onion, finely chopped
2 tablespoons fresh parsley, chopped
1 teaspoon Italian seasoning
Salt and pepper to taste
Topping
¼ cup chili sauce
¼ cup ketchup
1 tablespoon brown sugar
Preheat Oven: Set your oven to 350°F (175°C).
Prepare Pan: Grease a 9×5-inch loaf pan or line it with parchment paper.
Sauté Onion: In a small skillet, sauté the chopped onion over medium heat until softened, about 5 minutes. Let it cool slightly.
Mix Meatloaf: In a large bowl, combine the ground beef, breadcrumbs, egg, sautéed onion, parsley, Italian seasoning, salt, and pepper. Mix until just combined; avoid overmixing to keep the meatloaf tender.
Shape and Bake: Transfer the meat mixture into the prepared loaf pan, shaping it into a loaf. Bake in the preheated oven for 45 minutes.
Prepre Topping: While the meatloaf bakes, mix together the chili sauce, ketchup, and brown sugar in a small bowl.
Apply Topping: After 45 minutes, remove the meatloaf from the oven. Spread the topping evenly over the top of the meatloaf.
Finish Baking: Return the meatloaf to the oven and bake for an additional 15 minutes, or until the internal temperature reaches 160°F (71°C).
Rest and Serve: Let the meatloaf rest for 10 minutes before slicing. Serve warm.
