1 lb salmon fillets (cooked and flaked)
1 egg
2 tablespoons mayonnaise
2 tablespoons fresh parsley, chopped
1 teaspoon Dijon mustard
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon paprika
Salt and pepper to taste
1/2 cup panko breadcrumbs (plus extra for coating)
2 tablespoons olive oil (for frying)
Prepare the Salmon:
If using fresh salmon fillets, cook them until they reach an internal temperature of 125–135°F (52–57°C). Allow them to cool slightly, then flake the salmon into bite-sized pieces.
Mix the Ingredients:
