Ingredients:
1 pound Italian sausage (mild or spicy), casings removed
1 large onion, diced
3 cloves garlic, minced
4 cups chicken broth
4 medium russet potatoes, thinly sliced
2 cups kale, chopped
1 cup heavy cream
Salt and freshly ground black pepper, to taste
Red pepper flakes (optional, for extra heat)
Olive oil (if needed for sautéing)
Directions:
In a large pot or Dutch oven, cook the Italian sausage over medium heat until browned and cooked through, breaking it up into small pieces with a spoon. Remove excess fat if necessary.
Add the diced onion to the sausage and sauté until softened and translucent, about 5 minutes.
Stir in the minced garlic and cook for an additional 1 minute until fragrant.
Pour in the chicken broth and bring to a boil. Add the sliced potatoes and reduce heat to a simmer. Cook for about 15-20 minutes, or until the potatoes are tender.
Add the chopped kale to the pot and cook for another 5 minutes until the kale wilts but remains vibrant.
Stir in the heavy cream and season with salt, pepper, and red pepper flakes if using. Heat the soup gently but do not boil once cream is added.
Adjust seasoning as needed and serve hot, ideally with crusty bread or grated Parmesan cheese on the side.
