Ingredients:
2 tablespoons olive oil
1 medium onion, chopped
3 medium carrots, peeled and sliced
3 celery stalks, chopped
4 cloves garlic, minced
8 cups low-sodium chicken broth
1 bay leaf
1 teaspoon dried thyme
Salt and freshly ground black pepper, to taste
2 cups shredded rotisserie chicken
2 cups egg noodles
2 tablespoons chopped fresh parsley (optional)
Directions:
Heat olive oil in a large pot over medium heat. Add chopped onion, carrots, and celery. Sauté until vegetables are tender, about 5 minutes.
Add minced garlic and cook for an additional minute until fragrant.
Pour in chicken broth, add bay leaf, dried thyme, salt, and pepper. Bring to a boil.
Stir in shredded rotisserie chicken and egg noodles. Reduce heat and simmer until noodles are tender, about 8-10 minutes.
Remove and discard the bay leaf. Adjust seasoning with salt and pepper if needed.
Ladle soup into bowls and garnish with chopped fresh parsley, if desired. Serve hot.
