Perfect for busy weeknights, this stir-fry is easy to prepare and can be served over rice or enjoyed on its own.
1 lb ground beef
1 tablespoon avocado oil (or any neutral oil)
1 onion, chopped
4 garlic cloves, minced
1-inch piece of fresh ginger, grated
1 head of green cabbage, thinly sliced (about 8 cups)
1/2 cup shredded carrots
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 teaspoon sesame oil
1/2 teaspoon crushed red pepper flakes (optional, for heat)
Salt and pepper, to taste
Green onions and sesame seeds, for garnish
Prepare the Sauce: In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, and crushed red pepper flakes. Set aside.
Cook the Ground Beef: Heat the avocado oil in a large skillet or wok over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned and cooked through, about 5–7 minutes. Remove any excess fat.
Sauté Aromatics: Add the chopped onion to the skillet and cook until softened, about 3 minutes. Add the minced garlic and grated ginger, cooking for an additional 1 minute until fragrant.
Add Vegetables: Stir in the sliced cabbage and shredded carrots. Cook, stirring occasionally, until the cabbage is wilted and tender, about 5–7 minutes.
Combine with Sauce: Pour the prepared sauce over the beef and vegetable mixture. Stir to combine and cook for an additional 2 minutes to heat through. Season with salt and pepper to taste.
Garnish and Serve: Remove from heat and garnish with sliced green onions and sesame seeds. Serve hot over rice or enjoy as is.
