The combination of juicy chicken, caramelized onions, and melted cheese creates a satisfying and hearty dish that will please the whole family.
6 boneless, skinless chicken breasts (4 oz each)
¼ teaspoon paprika
¼ teaspoon garlic powder
¼ teaspoon salt
2 tablespoons light butter (made with canola oil)
1 small yellow onion, peeled and thinly sliced
1 (10 oz) can of French onion soup (such as Campbell’s)
½ cup reduced-fat mozzarella cheese (such as Market Pantry)
Preheat the Oven: Set your oven to 350°F (175°C).
Sauté the Onions: In a skillet, melt the light butter over medium heat. Add the sliced onions and sauté until they become translucent and slightly golden. Once done, remove the onions from the skillet and set them aside.
Prepare the Chicken: Season the chicken breasts evenly with paprika, garlic powder, and salt. Using the same skillet, increase the heat to medium-high and spray it lightly with cooking spray. Add the chicken breasts to the skillet and sear them on both sides until browned, approximately 5 minutes per side.
Combine the Ingredients: Return the sautéed onions to the skillet with the chicken. Open the can of French onion soup and pour it over the chicken and onions. Allow the mixture to cook for about 5 minutes or until the soup reduces slightly and thickens, ensuring that the chicken is thoroughly coated with the sauce.
Bake the Dish: Transfer the skillet to the preheated oven and bake for 20–25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
Add Cheese: Remove the skillet from the oven and sprinkle the reduced-fat mozzarella cheese evenly over the top. Return the skillet to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
Serve: Remove from the oven and let it rest for a few minutes before serving.
