1½–2 lbs boneless, skinless chicken breasts
½ cup Italian dressing
1 tbsp avocado oil or other neutral, high-heat oil
1 tbsp butter
10 oz cremini mushrooms, sliced
½ cup yellow onion, sliced
2 tbsp water
¼ tsp white pepper
¼ tsp black pepper
¼ tsp onion powder
¼ tsp garlic powder
½ tsp salt
2 oz Monterey Jack cheese, sliced
Marinate the Chicken: Using a fork or meat tenderizer, poke several holes into the chicken breasts to help the marinade penetrate. Place the chicken in a dish or zip-top bag and pour the Italian dressing over it. Seal and refrigerate for 2 to 24 hours.
Preheat Oven: Preheat your oven to 400°F (200°C).
Sear the Chicken: Heat the avocado oil in a cast-iron skillet over medium-high heat. Remove the chicken from the marinade and sear each side for about 5 minutes until golden brown. Remove the chicken from the skillet and set aside.
Sauté Mushrooms and Onions: In the same skillet, reduce the heat to medium and add the butter. Once melted, add the sliced mushrooms and onions. Sauté for 5–7 minutes until softened. Add water to deglaze the pan, scraping up any browned bits.
Season the Mixture: Stir in the white pepper, black pepper, onion powder, garlic powder, and salt.
Combine Chicken and Toppings: Place the seared chicken breasts back into the skillet. Spoon the mushroom and onion mixture over the chicken.
Add Cheese and Bake: Top each chicken breast with a slice of Monterey Jack cheese. Transfer the skillet to the preheated oven and bake for 10 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is melted and bubbly.
Serve: Remove from the oven and let rest for a few minutes before serving. This dish pairs well with mashed potatoes, rice, or steamed vegetables.
